Recipe Reverie
This Blush Berry Quinoa Parfait is my kind of edible morning glow — layers of nutty quinoa, almond yogurt, and rose-tinted berry compote topped with pistachios and petals. It’s light, creamy, and full of plant-based protein, perfect for a healthy breakfast or guilt-free dessert. Every spoonful feels like a little celebration of color and calm.

For the base:
- 1 cup cooked quinoa cooled
- 1 tsp honey or maple syrup
- 1/4 tsp cinnamon powder
For the blush berry compote:
- 1/2 cup raspberries fresh or frozen
- 1/4 cup strawberries chopped
- 1 tbsp chia seeds
- 1 tbsp honey or maple syrup
- 1/4 tsp rose water
For the yogurt layer:
- 1 cup almond or Greek yogurt
- 1/2 tsp vanilla extract
Toppings:
- 2 tbsp crushed pistachios
- Fresh blueberries & raspberries
- Edible rose petals optional
Step 1 — Cook and cool the quinoa
Cook quinoa as per package directions (1 part quinoa : 2 parts water). Fluff with a fork, stir in honey and cinnamon, and let it cool.
Step 2 — Make the blush berry chia compote
Add raspberries and strawberries to a saucepan with honey. Cook 3–4 mins till jammy, then stir in chia seeds and rose water. Cool completely.
Step 4 — Assemble the layers
Spoon quinoa at the bottom, followed by yogurt, then the blush berry compote. Repeat if your jars are tall.
Step 5 — Garnish and serve
Top with crushed pistachios, fresh berries, and edible rose petals. Chill for 10 minutes before serving.
🌸 This recipe feels like breakfast met dessert and decided to glow together.
For the prettiest layers, use a clear glass jar and spoon gently — don’t rush the layers; that’s where the charm lies.
You can prepare the quinoa and compote a day before and assemble in the morning for a quick grab-and-glow breakfast. If you’re packing it for work, keep the toppings separate and add them just before eating to keep that crunch alive.
To make it vegan, simply use plant-based yogurt and maple syrup instead of honey. It also tastes incredible with coconut yogurt for a tropical twist.
This parfait keeps well for up to 2 days in the refrigerator, though the colors and freshness are best on the first day.
💡 Little tip: Add a few frozen berries on top before refrigerating — they’ll thaw slowly and create a naturally chilled, juicy topping when you’re ready to eat.
