To be honest, there are far too many bad Christmas cakes out there, which is why I’m picky about them. I enjoy and dislike my Christmas cake in the next ways:
Cake must be equally delicious with and without alcohol ( I usually prepare it without so it is shared broadly )
I simply don’t like chewing into enormous pieces of orange rind. So, there shouldn’t be too much peel or citrus flavor. I simply enjoy a faint citrus taste;
I prefer the texture to be soft and velvety when sliced through. This is how “good fruit cakes” ought to be. as opposed to having a muffin-like texture and being “crumbly.”
I don’t want my Christmas cake to look like that; I make muffins all year round!
Fuggy and moist, yet clearly cake-like rather than brownie-like. Before posting this recipe, I attempted to compare a few cakes, but they were simply too dry.
Not brick-like, but fairly dense! Certain Christmas cake recipes are so dense that they seem like you’re slicing into a solid block of fudge. Thank you, but no!
Decorating is not required! Without frosting, fondant, or custard, the cake should be sufficiently moist and pleasant to eat on its own.

This fruit cake employs a very successful FAST fruit soaking method. First, cook the fruit in the microwave. Then, soak it for about one hour. Completely flawless!

You need very little cake batter and a lot of dried fruit!
- Dried Fruit Soaked
The ingredients for the Soaked Dried Fruit are as follows. For those who want alcoholic Christmas cake, the fruit is steeped in apple juice. It can also be soaked in a mixture of apple juice and brandy.
Ingredients for Dried Fruits
Use any dried fruit you like. Just make sure that the total weight is 855 g (30 oz). Although slicing your own dried fruit will result in a more wet mixture, you can simply use a store-bought mix.
A store-bought mixture of dried, crystallized (i.e., sugared) orange and lemon peel is called mixed peel. It usually comes already chopped, but I prefer to chop it a little bit finer. I am traumatized from all the times I bit into a giant piece of orange peel. Because of this, I prefer less citrus peel than certain recipes. Simply not to my liking! It will be very bitter and powerful if you use FRESH orange and lemon peel. I’m not sure how much fresh peel to use in its place.
Juice and/or alcohol: simply replace one-third of the apple juice with brandy to make a classic alcoholic Christmas cake. If you prefer a stronger citrus flavor, you can instead use orange juice instead of apple juice.
- Cake Batter for Christmas
Here are the ingredients you’ll need for the cake batter. Due of the cake’s density, only little baking powder is used. Some Christmas cakes are so rich that you may think you were eating a brick of fudge. In contrast, this cake still has a definite “cake” texture!

The cake gets its deep dark brown hue from the dark brown sugar. You can use regular brown sugar instead, which will lighten the cake and make the fruit stand out.
Molasses or golden syrup contributes to the depth of flavor and enhances the color of the cake. Both options are acceptable, and I alternate between them each year.
Walnuts can be replaced with any preferred nuts, or they be omitted entirely.
The combination of oil and butter is essential. The oil provides exceptional moisture to the cake. The butter adds flavor.
Instructions for Preparing Christmas Cake
Now, let us continue with the preparation process.
The primary factor that speeds up the preparation of this fruit cake is the method of soaking the fruit. Most recipes recommend soaking dried fruit overnight. I use a more efficient technique. I microwave the dried fruit with juice and/or brandy. I then allow it to rest for one hour to absorb the liquid. This method is considerably quicker and equally effective.
Aside from this, the process of making the fruit cake is quite standard. The cake is dense, so it needs a prolonged and gentle baking process. This ensures it cooks thoroughly without drying out the edges and surface. This method eliminates the need for water baths. I bake it for 2.5 hours covered with foil. Then, I bake it for an extra 30 to 45 minutes uncovered to achieve a golden-brown surface. I check for doneness with a skewer.
Christmas Cake Decoration ideas
A traditional Christmas Cake often resembles a large, dark brown block, making it an excellent candidate for decoration. Here are several suggestions for embellishment, keeping in mind that these are purely for aesthetic purposes. This fruit cake is rich in flavor. It is exceptionally moist. Unlike many other cakes, it does not need frosting to enhance its deliciousness.
For a simple approach, consider dusting the cake with icing sugar. Alternatively, adorn it with cherries or other fruits. Then apply a light dusting of icing sugar.
You also opt for Christmas tree decorationsโyes, inedible decorations are perfectly acceptable!
Another choice is to create a drippy white glaze. You can use the recipe from the Lemon Cake with Drippy Glaze, omitting the lemon flavor. To achieve a smooth surface, turn the cake upside down.
Traditional white fondant can also be used, as shown in the accompanying image. Some individuals have reservations about fondant due to past experiences with wedding cakes. Still, modern store-bought fondant has improved significantly in taste. It now resembles a soft sheet of sweet frosting.
Regarding the serving of Christmas Cake, this rich and moist fruit cake bursts with flavor. It is delightful when enjoyed on its own. No frosting or fondant is necessary, and this is how I savor the leftovers for weeks on end.
Though, if you wish to elevate the experience, consider serving it with custard. Homemade custard is preferable. If you use a store-bought version, enhance it by stirring in some vanilla bean paste. The tiny black specks will add a visually appealing touch and significantly enhance the flavor.
Lastly, you will be pleased to learn that this cake has an impressive shelf life, remaining fresh for weeks. It can be stored in the refrigerator for up to three months and in the freezer for a year.
